You already know that Lucky Peach is ne plus ultra of food writing. If you need more proof - here is their feature on Marco Canora's perfect way to make gnocchi.
I love the balance between the recipe for the gnocchi and for the actual sauce. So, if you know someone who has done all the steps ahead well (perhaps Tosatti?), then:
[...] make a tea with a half cup water and a small bunch of sage leaves, and then we mount butter into it. That’s it. Parmigiano-Reggiano garnish, flaky salt, crumbled fried sage, freshly ground black pepper.
